Crockpot Mississippi Roast Recipe




Hello Friends! 
With the school year right around the corner, I am making sure I have all of my easy and fast recipes on hand. Is there anything better than coming home after a busy day and dinner is ready because of our crock pot?



I don’t know why this is called Mississippi Roast but if I could, I would totally change the name of this roast to be “The Best Roast Ever!” 

Five simple ingredients, zero effort, 100% dinner & leftover satisfaction! The flavors are incredible. I never would have thought that four simple ingredients would make such an amazing roast? I loved coming home to this delicious meal! 

Here is what you will need for this great dish! 


INGREDIENTS
  • 3- pound chuck roast
  • 1- ounce packet of dry ranch seasoning mix
  • 1- ounce packet of dry au jus gravy mix
  • 6 tbsp unsalted butter
  • 1/4 cup water
  • pepperoncini
Directions
  1. Add 1/4 cup of water into your slow cooker then place the roast on top.
  2. Sprinkle the dry ranch seasoning mix on top of the chuck roast, then sprinkle the dry au jus mix on top, then place 6 tbsp. of butter on top of the roast, and finally 5 pepperoncini around the roast.
  3. Cook on low for 8 hours.
  4. I like to shred my roast with the two fork method which is slowing pulling it apart. You can serve with mashed potatoes or rice.

Weekend Getaway to New Orleans


Hello Friends! 

This past weekend we decided to get away for a last minute trip to New Orleans with family. My great aunt lives just outside of New Orleans and we were very excited about the change to see her! 



Of course Binx was going to need to go with us and it was so sweet of my Aunt to say that she did not mind for him to come along. I have to tell you he was the best little boy on this trip. I was so proud of how sweet and well behaved he was. 

As you can see above he wanted to make sure he did not miss out on joining us. He made sure he jumped in my suitcase the minute I opened it. How cute is he!!


The drive over was really nice and the weather was perfect. I always love weekend getaways with Eddie. 


On Saturday we went to The Global Wildlife Center and had the chance to feed the animals  on their trolley. This was so much fun and seeing the animals up close was just amazing. 


My nephews just love Trey and its fun to see how tall he is next to them. I love how they always rush to sit right next to him. 

This was the first deer we saw as we entered  and it was so sweet to see the little baby next to it. The kids just loved it. 


This gives you an idea of what you purchase to feed the animals. We went with the big bucket so we could all scoop our cups in and feed them. 




You have to be careful with this one because they are known as the "Cup Stealer!"







The zebras were beautiful in person. You are not allowed to feed the zebra's because they bite if they like you and bite harder if they dont! 


I always thought that the lamas spit but they only do this if you are mean and really push their buttons. Poor guys really get a bad reputation and it sounds like its not their fault! I cant guarantee this is true but I do know I don't want to test it. 


I think this was one of the biggest highlights of the day. This mommy giraffe just had this baby a week before our visit. You can see the baby standing right next to the mom. What a beautiful site.

The guide said if you touch his horns you get 7 years of good luck so of course I had to touch them! 







This was such a fun day!


Then we were on our home to all take a nice long shower and it was time to dress up for dinner. We enjoyed a wonderful dinner at Ruth Chris Steak House.

Italian Mozzarella Meatball Sub Sandwich



Hello Friends! 


I want to share a favorite sandwich that my son Trey loves! Its my Meatball Sub that I top with mozzarella cheese melted over the top. Its really easy to quickly put together on a busy school night or for a fun weekend movie night. 


  • 1 1/2 pounds ground beef
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley leaves
  • 3/4 cup Italian bread crumbs
  • 1/4 cup grated Parmesan
  • 1 large egg
  • 1 tablespoon olive oil
  • 4 rolls or buns 
  • 4 ounces mozzarella, sliced


  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine ground beef, shallot, garlic, parsley, bread crumbs, Parmesan, and egg. Using clean hands, stir until well combined. Roll mixture into 1 1/2-inch meatballs, forming about 18-20 meatballs.
  3. Heat olive oil in a large skillet over medium high heat. Add meatballs, in batches, and cook until all sides are browned about 4-5 minutes. Transfer to a paper towel-lined plate.
  4. Have your marina sauce ready to place in the pot with meatballs. 
  5. Reduce heat to low and add sauce and meatballs to the skillet, simmering until the sauce has thickened about 10-15 minutes.
  6. To assemble the sandwich, place 3-4 meatballs and a spoonful of marinara into each baguette. Top with sliced mozzarella and place into oven and bake until the cheese has melted about 3 minutes. Do not walk away because the cheese will melt quickly. 
  7. Serve immediately
