Easy Steak Fajitas Recipe



This week I have been working on easy recipes for the nights you come home after a very busy day at work. This one was very easy and was a big hit with my family. It will be a keeper because it was one of those dishes that seemed like you went to a lot of trouble.


I used a flank steak because its a larger piece of meat and at a great price point. I picked mine up at Target and to make it even better they had a $3.00 off coupon on the package. Always look for coupons even on meat.


I cook mine on a hot cast iron skillet for just a few minutes on each side. You really want it to be at a rare temperature so you can take it off and cut it in strips. Before you cut it let it sit for about 5 minutes so the juice settles.


I take 3/4 cup of water with one packet of taco seasoning and start cooking my onions until they are translucent and tender.


Then I add my steak which you can see is rare. You will find once you place the top on your dish it will finish cooking the steak to a medium rare and also add the taco seasoning favor to the meat. It really was such an easy dish to cook.


To add a little something extra I placed all the toppings in little white ramekin bowls that you can pick up at Pier One. There are so many toppings you can add.

Refried beans
salsa
sour cream
rice
tomatoes
lettuce
olives
cheese


I love to serve mine on white dishes because it really lets the food speak for itself. This recipe was so easy and cost friendly! Hope you will give it a try!

Weekend Shopping Trip Haul Recap


We decided to get away for the weekend and visit the campus for one of Trey's favorite sports team and we added a shopping trip in so we were all happy!! We had such a good time and here are some pictures from our day.




I love this picture and plan to have it framed for my desk at work.


Trey was very excited to purchase a campus sweatshirt.


Ipad, new sweatshirt, and comfy chair next to the heater makes for a perfect resting spot while you wait for your 2nd cup of hot chocolate. Perfect afternoon!!

Then we were off to lunch in the hotel before heading out on the road and shopping!

As we were leaving we saw a site that you do not normally see in a hotel but look how beautiful and well behaved they were. I tried hard to sneak this picture.


Then it was time to check out.

The sweetest husband ever!


Our first stop was Ann Taylor and I found this shirt. I just knew I had to have it because every girl needs a crown, right! This is the perfect lazy Saturday around the house with black sweatpants or I am looking forward to pairing it up with jeans, boots, and a black cardigan.

I found a new store that is staying on my list. It was amazing, its Versona. Here is a peak at some of the jewelry items that were so pretty.







I picked this necklace up along with the green cardigan that has blue sailboats on it. So pretty.

I love the chunky pearls with gold chain.


They had this blue striped sweater which paired with the stone necklace perfectly. Its very soft and I love the scarf that goes with it. The scarf buttons in the back of the collar which helps it not to move and slide.



I also picked up this blouse which is perfect for spring/summer but with a cardigan it will also work for winter weather. Again I just love this store.




I love this gray cardigan so much that I went back and picked it up in brown also. Its so soft and light weight. You can wear it in so many different ways. I actually wore it to an event this past week and it worked perfect over my dress with boots.




Then we were off to Ulta because I am looking for a new primer. I was worried about trying something new and then I found this kit. Its from Laura Geller and its the Sparkling Rose 5 piece collection. I must say I love it. The lip color is perfect for everyone and the blush is great. The primer is very nice and will be one that I pick up the full size of. Side note, since purchasing this I went back and picked up the green color correcting primer which I also love.


This Big Sexy Hair Root Boost is amazing. I love how it gives you volume but doesn't add any type of crunch to your hair. You still end up with soft  hair unlike some root boost products that add a crunch. The hair spray is one of my favorites.

Peter Thomas Roth Facial Peeling Gel



This is amazing!!!! When I was in Ulta and asking the sales associate for something new since my 40's are right around the corner and she told me this was her favorite new item. She told me how after the first use you see a difference and I just didn't think that could be possible. Well it is!

On their site they state- Visibly rolls, lifts and sweeps away dead skin cells when massaged onto skin.  Multi-action enzymes and cellulose help uncover a smooth, fresh, new complexion.  For all skin types.

I was amazed at how it was really sweeping away dead skin cells as I was using it. The sales associate said you should only use it 2-3 times a week. A couple of other details from their site are- Multi-action enzymes (pineapple, pomegranate, keratinase) and cellulose effectively peel and help uncover a smooth, fresh, new complexion without drying, irritating or causing undue stress to skin. Removes impurities and decongests clogged pores for a youthful, radiant look.

This product cost $48.00 and you only need a small amount 2 times a week so it will really last. I would say it is well worth it! My new favorite!

Peach Cobbler Cake


I attended a business meeting where everyone brought a dish and this was one of them. We had coffee and this Peach Cobbler Cake and it was so yummy that I knew I had to have the recipe so I could make this for my family. I gave it a try this weekend and it was a hit.






Here's what you will need:



 1 - box yellow cake mix. Very important to use a plain yellow cake mix.
 1 stick of butter cut into pieces
1/4 tsp. cinnamon
Two 16 oz cans of peaches in heavy syrup. Make sure you keep the syrup.

*Start by pre- heating the oven to 375.

*Take a 9 x 13 pan and spray with Pam.

*Empty both cans of peaches into the pan first. Cover peaches with cake mix and press down the cake mix until cake mix meshes in with peaches and juice. You are not stirring or mixing, just press.

* Cut butter into small pieces and place on top of the cake mix. Sprinkle with cinnamon. Bake for 40 to 45 minutes.

*Let cool and serve with vanilla ice cream for a great peach cobbler!

Fitbit One Fitness Review



I was in need of something to help motivate me because it seems I have been so busy and could not find the time to do anything extra in the day when it came to fitness. It even took all I could do to make it to the gym just to sign the membership papers. This was hard for me to accept since a year and half ago I ran 4 half marathons in one year. How did this happen and where did the fitness girl in me go?

Then I heard Tammy talk about this great new item.....the Fitbit One. I am so shocked because even though my mind is running 100 miles an hour this helped me see I am doing it sitting in my chair! I am not getting any where near what I should be with the correct amount of steps in a day. Now on Sunday evenings I make an appointment each day to get my fitness in. Its a must and my goal now is to get my 10,000 steps in a day.

The FitBit is easy to set up; you just turn it on and synchronize it to the profile you create on fitbit.com. The FitBit tracks calories burned, steps taken, stairs climbed and sleep. The information then synchronizes to your computer and to your smart phone where you can see all of your activity. From the website or the app, you are able to see the FitBit tracking information. You can also log food and workouts making the FitBit the ultimate activity tracker.

The Fit Bit One is small and is able to clip onto on a waistband, pocket, sleeve, sports bra or any place you would like to wear it. Just be aware that wherever you choose to wear it, you will just want to remember to remove it from your clothing as not lose it to the washing machine. Twice I have almost forgot I had it on and put it in the laundry pile. The monitoring fee is included in the purchase of the device as to where some units have a monthly fee. The battery life lasts longer and the wireless technology is convenient.


This is an example of what my daily log looks like. It breaks down steps and miles but also stairs and my real active minutes. At night you wear it on a wrist band and it tracks your sleep.



You can see I went to bed at 10:45 and woke up at 6:52 with 7 hours and 54 minutes of sleep. I did not get up but did move around and was restless 5 times which came to a total of 5 minutes.


Its small and is even programed to show Good Morning Erica! I love that it comes with a small plufg for my desktop computer and an app for my Ipad and Iphone. This allows me to check my steps without having to remove the unit since it is tucked under my clothing. As I am at the end of the day and getting ready to post this its 6:00pm and I have worked hard all day but I am only at 5,000 steps so I need to hit the treadmill and push out 5,000 more!!!

OK, so here comes to the coolest part in my opinion because I’m so darn tired of cumbersome wires: It’s all WIRELESS!
There is NO NEED to plug the darned thing into your computer ever except to charge it, and the charge lasts 5-7 days! I just checked mine and it’s still more than half charged after using it consistently since Friday.
Oh! And there’s a phone app too! Seriously, this thing could not be any cooler.
I’m already an active person. I usually take the stairs, I go for walks with the kids, I try to move as much as possible.  I don’t need a Fitbit. But even I sit for long stretches at my computer, and seeing all this fun data nudges me to move even more. It’s also not letting me deny how little sleep I really do get. Last night was the first night I went to bed before 11 in months and it was partially because I knew I’d see the total hours slept the next morning.
I don’t care if it’s nerdy, I like the darn thing!
Oh, I should note, I have been having some technical problems on their site regarding friends. I sent them a ticket about an hour ago so I’ll see how their customer service is, too.

It Doesnt Always Have to be Homemade


I am sure you are wondering why I am sharing a post with a boxed item instead of homemade muffins. As a very busy mom that is always on the go with work and school activates, I wanted to share a box mix that we really enjoyed. Its the Betty Crocker Cinnamon Streusel muffins and they are really yummy.


This as a reminder that your family will still be pleased with a baked item from the box that you make with love and serve on a pretty platter! The kitchen is still filled with the scent of fresh baked goodies. These were gone within minutes of coming out of the oven . I have never had someone tell me they didn't taste like cut them short of a home baked muffin. They just ran to grab one and enjoyed. Afterwards I always get a very sweet hug and thank you!

Tory Burch Shoe Purchase Review


In the past when I purchased my Tory Burch items I went through Nordstrom which was a three hour drive to New Orleans. The closest Tory Burch store to me is in Atlanta which I really hope to get to visit when we take a trip for my 40th Birthday next month. I am such a Tory Burch fan. The next big visit is the Tory Burch outlet in Orlando, Florida and we are planning a fun girls trip for that one!

This past week I placed an order online from the Tory Burch website and I was very pleased with my delivery. The quality of the delivery was wonderful and I expected nothing less from Tory.


The details went all the way to the shipping box with the Tory Burch logo on the inside. I hated to throw it away.

They sent a perfume sample of her new perfume and I love it! I definitely plan to add that to my collection soon.


The scent is so fresh and the bottle is beautiful, I cant wait for it to sit on my makeup dresser.


Its hard to see here but they even send your receipt and product info in a clean white envelope with the logo.

The product is wrapped in the great orange paper with a gold sticker to hold the thank you note for purchasing her product.


I love every detail all the way down to the box wrapped with its pretty purple ribbon.

I love how comfy they are and the stones on the bows are so pretty. The color is the prettiest blue which will go great with everything from jeans to leggings with a sweater. I am very pleased with the great customer service and delievery so I would highly recommend Tory Burch online purchases!
