We had lunch at Zoe's Kitchen this past weekend and loved the Chicken Roll Up. I knew without a doubt I could make this at home. I did and it was a huge success. Here is how I did it.
Lay out your uncooked shell to start the process.
You will need to first sauté your onions.
Grill your boneless chicken breast and cut into thin strips. You can use any type of seasoning for your chicken.
Cut tomato into chunks
Add feta cheese
Add shredded lettuce
Then wrap the roll of very tight, the key is to not fill to full. You will cook in sauté pan about 2 minutes on each side. Watch it very close so you do not brown the sides to full.
Serve with a side of salsa!
