Pioneer Woman Enchiladas Recipe


I love watching the Pioneer Woman series on the Food Network and this weekend I wanted to try her Enchiladas. My family enjoyed them because it was a different take than the usual mix of meat with taco seasoning. I did make mine a little different only that I did not fry my shells. I tried to stay a little healthy if I could. Again let me mention this recipe is from the Pioneer Woman and I changed it up just by not frying my shells.



Ingredients

  • FOR THE SAUCE:
  • 1 Tablespoon Canola Oil
  • 1 Tablespoon All-purpose Flour
  • 1 can (28 Ounce) Enchilada Or Red Sauce
  • 2 cups Chicken Broth
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Black Pepper
  • 2 Tablespoons Chopped Cilantro ---I did not use this.

Now one lesson I learned with the sauce is you do not want to cook it in a big pot. If you keep it in a smaller pot it will thicken better.



  • FOR THE MEAT:
  • 1-1/2 pound Ground Beef
  • 1 whole Medium Onion, Finely Diced
  • 2 cans (4 Ounce) Diced Green Chilies
  • 1/2 teaspoon Salt
I only used one can of the green chilies and it was plenty.

  • FOR THE TORTILLAS:
  • 10 whole (to 14) Corn Tortillas
  • 1/2 cup Canola Oil
Again I did not did mine in the canola oil only so I could try to stay a little healthier.
  • TO ASSEMBLE:
  • 3 cups Grated Sharp Cheddar Cheese
  • 1/2 cup Chopped Black Olives
  • 1 cup Chopped Green Onions
  • 1/2 cup Chopped Cilantro----did not use.

Preparation Instructions

Step #1 – The Sauce
In a large saucepan over medium heat, add oil and flour and whisk together to make a paste, cooking for one minute. Pour in the red sauce, chicken broth, cilantro, salt and pepper. Bring to a boil. Reduce heat and simmer 30-45 minutes.
(I know she said in a large sauce pan but do not go to large so your sauce can thicken like it should.)

Step #2 – The Meat
Brown the meat with onions in a skillet. Drain off fat. Stir in 2 cans diced green chilies and seasoned salt. Set aside.
(Remember I only used one can of chilies and it was plenty)

Step #3 – Tortillas
Heat canola oil in a small skillet over medium heat. One by one, using tongs, fry tortillas in oil until soft, not crisp – about 30 seconds per side. Remove to a paper—towel lined plate. Repeat until all tortillas have been fried.
(I did not fry mine but used right out of the package)

Step #4 – Assembly
Preheat oven to 350 degrees. Pour ½ cup red sauce in bottom of baking pan. Spread to even out. Dip each tortilla into red sauce, then remove to work surface. Spoon meat, a little grated cheese, a little black olives, and green onions in the center of tortilla. Roll up and place, seam down, in baking pan. Repeat until pan is filled. Pour extra red sauce over enchiladas. Top with remaining cheddar cheese.
Bake for 20 minutes or until bubbly. Sprinkle cilantro over enchiladas before serving.

We enjoyed these and again it was a nice twist from the usual style with the taco seasoning.

New Origins Face Product Order


I have a new favorite product line, Origins!!! A friend recommended that I should try it since I was looking for night cream and I just love everything I have tried. I placed an order a few weeks ago that I posted here.

I loved every thing I received in that order. I placed an order recently and was really excited to try the products. I waited to post this so I could have an opinion on the products. I can only say I love everything!



I love seeing all the new goodies!!


I just didn't know which one to start with first. I wanted to give each product at least a week each to know I really liked it.


The United States Balancing Tonic. There site states:

One thing I love about the Origins site is they also run promotions where they give free samples to try with a purchase. These are three of the samples that came in my package that will last me easily two weeks each.

Starting Over Face Cream. The site states:

Saturday Recap


Trey and I set out on Saturday to work on a school project where we must visit three historic locations and take photos and report on it. We had such a fun day and here is a look into our day.

We started at a local Catholic Monastery where the Sisters live on the grounds. It is stunning and such a peaceful place.


The stain glass windows were gorgeous.





I loved these wood doors. They were very heavy solid wood doors.



We were so excited we had the chance to visit the inside of the chapel.


The gate entrance was so nice. This is off a busy street but the minute you enter there is such a peace you can feel. Its just beautiful and I would love to visit more often. They had a bench that I could easily find myself very happy sitting on with a great bible study.


To think that the sisters were behind these doors was just amazing. The beauty of the grounds was really something. I would have loved to have had the chance to go inside their living quarters.




Trey even picked his grandmother up a statue of Mary.

Then we were off to the Oakleigh Mansion in our historic area of town.



The Oaks on the grounds are some of the original trees from the early 1800's. Just amazing history.




Then it was time for a break and we went to Starbucks. Trying to stay healthy I picked up a non fat with no whip white chocolate mocha and Trey picked up his favorite Naked Mango drink.




We made a stop at the Ann Taylor Outlets and find some great new items. Here are two of the items I picked up which I wanted to wear to church before the weather changes. They have an amazing sale going on so if you have an Ann Taylor Outlet I would visit soon!


I had a birthday gift card and award points to use and I did awesome with my shopping deals. I picked up a pair of pants, sweater, scarf, cardigan, and three shirts. The best part is everything goes with so many different pieces so its like 100 different outfits!



I love the brown long cardigan which goes perfect with pants, jeans, or leggings. The scarf was something I picked up at the last minute because they had it sitting in a basket at the register. It was an extra 50% the already clearance marked price. I could not pass it up since it went with several of my other pieces. I cant wait to share those also.



I have loved wearing my scarf long with several of my outfits instead of wrapping it up. I think it gives a completely different look to your outfit for both a casual and dressy look.


I also picked up the pants I have on which are a pant that look like jeans and jeans that look like pants. I love them!!! The sweater, scarf, and pants paired perfect with my little brown clutch and brown Tory Burch wedge shoes. I cant wait to share the other items I picked up because they are so cute! We had such a fun Saturday. Even if you don't have a project I would still highly recommend taking a day to explore your city and take photos. We just had a blast and looking at historic sites or landmarks cost us nothing, just the gas to drive around. Find something for you and your kids to explore! You could even make it a "date day" with your spouse.

Mini Chocolate Chip Cookie Surprise Recipe


I went to a cookie swap over the Valentines Day weekend and had such a great time. I had the chance to try a recipe that I knew I had to bring home. I actually made it one of the 14 Gifts of Valentines for my husband so I am sure you have seen the picture from that post. It was so easy.



 Its so easy to put this together. Above you can see what you need:

  • Muffin pan
  • Pam spray
  • Mini chocolate chip cookie dough
  • Mini chocolate chips
  • 1 zip lock bag

Start by taking your mini cookie dough and mashing it flat and laying in the muffin pan.

Then melt your chocolate chips in the zip lock bag to make it like a piping bag. Place just a little melted chocolate on the dough.



Take another piece of the mini chocolate chip dough and flatten to make a topping.


I baked mine like the cookie dough instructions and watched it closely. As you can see when it comes out the chocolate is a melted wonderful center.



I topped mine with ice cream and made it a special treat!

What a Difference New Lighting Makes In Guest Bedroom


I am not ready to share the complete room makeover because we still need to paint and add a few more touches with accessories. I do want to share the new light fixture we put up this week. It makes such a difference and I love it.


You can see the big white fan...it just wasn't the look I wanted.


Here is the before with the ceiling fan. One item I want to mention is all the furniture was a separate project I took on and painted. I love how it turned out but I will share that in a separate post. You can see the ceiling fan just didn't add the warm feeling I wanted for guest.


When I first opened the box and say that I had to put this together piece by piece I really thought I made a mistake.....yiks!!!


All the jewels were wrapped up and they even gave me white gloves to wear which I could not wear. When you try to put the wire and little jewel together the gloves made that a little hard.

Once it was up, I loved it!





It is so soft and elegant and even better in person. Remember I will be painting the room a gray tone and possibly stenciling the back wall.



I will talk more about the furniture later but I painted each piece to go with my gray, black, and white theme.



I love finding elegant pieces to add that special touch.



I was really happy when I found my silver lamp for the desk. Its perfect with the silk lampshade and silver base. The desk is also one of the pieces I panted to match the set.







I love the area rug that site in front of the love seat and bench in front of the bed. I was thinking about going with a large rug but I really liked this one.



One other piece that I was so happy to find was this chair. Its the perfect pieces with the silver tacks on the backing.




The window seat is completed and I found the perfect pillows from Pier 1 during the holidays but I love how they look and will keep out all year.


I will share more later when we complete the painting and find the finally pieces but I did want to share that lighting makes all the difference!
