We love baked potatoes, mashed potatoes, and just about any kind of potato you can think of. I was excited to find this recipe on The Pioneer Woman's blog. They were so easy to make and looked like you went to a little bit of extra effort.
The items you will need: New Potatoes, Olive Oil, Kosher Salt, Black Pepper, and whatever seasoning you like. I sprinkled a little ranch seasoning on mine.
Begin by bringing a pot of salted water to a boil. Then boil potatoes with skin on until they are fork tender.
Then take your potato masher and only push on them until they split open. I place mine on a lined cookie sheet with parchment paper.
Brush the top with olive oil or melted butter. Top with seasonings, cheese and bacon bits. Place in the oven at 400 for 10 minutes or until cheese is melted.
They are very good and you can top them with anything from sour cream to extra cheese!
