Sunday Lunch and Panera New Sandwich

I don't know if you have been to Panera Bread lately but they have the best sandwich right now.  New Roasted Turkey & Cranberry Panini - All-natural roasted turkey, garlic & herb cheese spread, zesty cranberry mostarda (cranberry chutney), and fresh spinach on our fresh baked artisan Ciabatta.


Trey loves to go to Panera after church on Sundays so this has become a habit for us.



My favorite dish is the sandwich and Apple Fuji Salad combo and its all under 450 calories!!





I did a little research online and here is one recipe on how to recreate this sandwich. I am going to give this a try since they will not be offering it all year.


Obviously the star of this sandwich is the cranberry chutney and the cheese so grab some Boursin, turkey breast, fresh spinach, good crusty bread and the ingredients listed for the recipe below to make an awesome Panera Panini Copycat Sandwich.


Cranberry Mostarda Recipe


1 cup sugar
1/2 pound fresh cranberries
2 tablespoons Colman’s dry mustard
1 teaspoon white wine
1 tablespoon black mustard seeds
Kosher salt

Combine sugar, cranberries, and one cup of water. Bring a boil, lower heat and simmer for 10 minutes.
While the cranberries cook, combine the remaining ingredients and whisk. Add mustard mixture to the cranberries and cook for 15 minutes over high heat until thickened and syrupy.


On a side note I had to share this photo. It was finally cool enough to wear boots and then I had a good laugh when I looked down and saw this!!!
